Ingredients:
2 egg yolks |

Preheat the oven to 150°.
Separate the yolks from the egg whites. |

Beat the egg yolks and sugar until the mixture whitens and doubles in volume..
In a saucepan, boil the cream with the vanilla extract.. |

Pour in the boiling cream several times over the mixture milled (egg yolks and sugar) stirring each time. |

The mixture is ready. |

Pour into ramekins. |

Place the ramekins in a dish filled with hot water, to cook in a bain-marie. |

Bake 40 minutes at 175 °. |

Put a teaspoon of brown sugar and brown under the grill or with a kitchen torch.
