Catalan Cream
Ingredients :
3 egg yolks
40g sugar
25cups milk
15g cornstarch
1/2 vanilla bean

a little brown sugar for grilling

Mix sugar and egg yolks.
Add the cornstarch.
Heat the milk and 1/2 vanilla bean.
Then infuse vanilla
Pour the hot milk onto the mixture while stirring .
Filter the mixture with a fine sieve into the pan.
Put the pan on low heat.
Stir constantly until mixture thickens your.

Pour immediately into ramekins. Refrigerate.
Just before serving, Pour a little sugar.
Toast the cream to the small kitchen torch.
